Orange
Tomatoes Soup (vegan)
Ingredients
for 1 serving:
- 300
g of ripe tomatoes on
the vine
- Juice
of 1 orange
- 3
tablespoons omega-3 oil
of your choice, like flax
oil
- sea
salt
- pepper
from the grinder
- possibly
some agave syrup
- toasted
pine nuts
Preparation:
Wash the tomatoes, remove seeds, cut
and season with sea salt and pepper.
Then purée everything in a
blender and strain through a sieve,
so that the shell gets stuck.
Heat
the resulting puree gently, add the
orange juice and taste - according
to preference - some agave syrup and
sea salt. Add omega-3 oil to the soup
just before serving. Sprinkle with
pine nuts and enjoy.
Tips:
Refine just before serving with soy
yogurt or oat cream.
